Vegan Baked Root Vegetables Recipe

 Check out this simple root vegetable side dish. This is a great dish to whip together when your looking to try a little something different with your meal, that uses vegetables you might not typically work with.

Ingredients

  • 1/2 cup cubed red potatoes
  • 1/2 large yam, peeled and chopped
  • 2 large carrots, peeled and sliced
  • 1/2 large parsnip, peeled and chopped
  • 1/2 jicama, peeled and chopped
  • 1 turnips, peeled and chopped
  • 2 tablespoons minced fresh rosemary, or to taste
  • 2 tablespoons and 1-1/2 teaspoons olive oil
  • 3 cloves garlic, minced
  • 1-1/2 teaspoons sea salt 
 
 

Cooking Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Combine red potatoes, yam, carrots, parsnip, jicama, and turnips in a large baking dish.
  3. Mix rosemary, olive oil, garlic, and sea salt in a small bowl; pour over vegetables and toss to coat.
  4. Bake in the preheated oven until vegetables are tender, 35 to 45 minutes.

 Vegan Mango Sticky Rice Recipe

Ingredients


  • 2 cups uncooked sticky white rice. Rinsed.
  • 1 (13.5 ounce) can coconut milk.
  • 1 cup white sugar
  • 1 tablespoon white sugar
  • 1/4 teaspoon salt
  • 3/4 teaspoon cornstarch
  • 2 ripe mangoes. Peel and cube.


Directions

  1. Cover the rice with fresh water. Allow rice to sit for 30 minutes. Drain off the water so that rice is covered by about 1/4 inch of water.
  2. Place the rice into the microwave oven covered and cook on high until the water has mostly absorbed but the rice is still slightly wet. This takes about 10 minutes; stir and cook until almost it's almost dry then cook for about 4 more minutes.
  3. Mix half the coconut milk and 1 cup of sugar in a bowl, stirring to dissolve the sugar. Pour the mixture over the rice and stir to coat rice with the mixture. Cover and allow the rice to stand at room temperature for 20 minutes.
  4. Pour the remaining 1/2 can of coconut milk into a saucepan and whisk in 1 tablespoon of sugar, salt, and cornstarch until smooth. Bring the mixture to a simmer over medium heat, whisking constantly, and simmer until thickened, about 2 minutes. Remove from heat and allow to cool.
  5. To serve, scoop the rice into individual serving bowls and top each serving with about 2 tablespoons of the coconut sauce and several pieces of mango.

Ingredients
  1.     1 tablespoon apple cider vinegar
  2.     1 1/2 cups almond milk
  3.     2 cups all-purpose flour
  4.     1 cup white sugar
  5.     2 teaspoons baking powder
  6.     1/2 teaspoon baking soda
  7.     1/2 teaspoon salt
  8.     1/2 cup coconut oil, warmed until liquid
  9.     1 1/4 teaspoons vanilla extract

Directions
  1. Preheat oven to 350 degrees F (175 degrees C). 
  2. Grease two 12 cup muffin pans or line with 18 paper baking cups.
  3. Measure the apple cider vinegar into a 2 cup measuring cup. 
  4. Fill with almond milk to make 1 1/2 cups. Let stand until curdled, about 5 minutes. 
  5. In a large bowl, Whisk together the flour, sugar, baking powder, baking soda and salt. 
  6. In a separate bowl, whisk together the almond milk mixture, coconut oil and vanilla. 
  7. Pour the wet ingredients into the dry ingredients and stir just until blended. 
  8. Spoon the batter into the prepared cups, dividing evenly.
  9. Bake in the preheated oven until the tops spring back when lightly pressed, 15 to 20 minutes. 
  10. Cool in the pan set over a wire rack. 
  11. When cool, arrange the cupcakes on a serving platter. 
  12. Frost with desired frosting.
